It’s Chili Season!

Cooking chili over the campfire in NH

Today’s prompt is difficult as I LOVE to cook and most things I cook come out well. Being forced to choose just one, though, I will have to say my chili is my favorite. I like to make both red chili (with beans, ground meat, and corn) and white chicken chili. I don’t have a true recipe I follow and my favorite way to cook it is over the campfire, like the picture above. That’s our firepit at our seasonal camper in Laconia, NH.

In my red chili, I use:

  • Mirepoix of celery, onion, and pepper-I prefer orange or red in my chili
  • Minced garlic-and LOTS of it!
  • Ground meat-beef, pork, turkey, chicken, sausage, etc-I like to mix a couple for extra flavor
  • Beans-I like small white beans, navy beans, and pinto beans. Sometimes I like to use chili beans already in the chili sauce. Lately, I have been adding chickpeas because they have more protein. Also, I usually use canned for convenience, but I do prefer dry beans if I have the time and plan it out right
  • Canned diced fire-roasted jalapenos
  • Corn-I prefer frozen over canned for flavor
  • A good beef stock or beef base and water
  • Tomato paste
  • Unsweetened cocoa powder
  • Spices-cumin, chili powder, smoked paprika, granulated garlic, onion powder, salt, pepper, and sometimes I will use smoky chipotle taco seasoning for an extra kick

In my white chicken chile, I use:

  • Mirepoix of celery, onion and carrots
  • Minced garlic-again LOTS of it!
  • Chicken breast (sometimes I use ground chicken instead)
  • Small white beans
  • Chicken broth
  • Canned diced fire-roasted jalapenos
  • Spices-cumin, chili powder, sage, thyme, smoked paprika, granulated garlic, onion powder, salt, pepper
  • Cream of chicken soup to thicken it

When I serve it, I like to melt cheese on top and use either sour cream or greek yogurt. It is the perfect fall meal. I like to use the leftovers to make nachos for football Sunday.

    1. I donโ€™t make it super spicy because my fiancรฉe doesnโ€™t really like spicy either. I add my own Texas Pete hot sauce after. ๐Ÿ˜

    1. I agree totally! I have the setup in the picture in my post and also a tripod with grate. I also redid my fire pit so it has a separate side for cooking.

    1. There sure is! That’s why I don’t have a set recipe. I do it to taste everytime.
