
My favorite food is definitely red meat of pretty much any kind. Prime rib, medium rare is my favorite. However, with high cholesterol and high blood pressure I have to limit my red meat intake. Prime rib is reserved to maybe twice a year – my birthday and Christmas. There is just something about the way the meat melts in my mouth that is amazing. Also – I LOVE the fat. Maybe an unpopular opinion but there it is. And you know, maybe the reason for the high cholesterol and blood pressure since I eat all meat fat I can. LOL!!
These days, I have red meat as a rare treat. It does provide essential nutrients, but I like the fattier, more unhealthy cuts so I stick to leaner chicken and pork and seafood instead.
All that being said, I have a chuck roast in the crock pot as I write this and it smells like heaven. Can’t wait to have my “red meat treat” for the month!
